Is there anything more magical than a slice of chocolate cake? Why yes, there is…a gluten free slice of chocolate cake! You will never know this cake is gluten free though. Full of chocolaty buttermilk flavor with a perfect amount of frosting, this gluten free chocolate sheet cake is simple to make and easy to eat!
I’ve seen this recipe around a few times. I first had a gluteny version from a Colorado cookbook and the cake was called Denver chocolate sheet cake. I’ve run across another recipe where it was called Texas chocolate sheet cake. Maybe every state has their own claim to this delicious cake??? Whatever it’s called, you can guarantee the butter, sugar, chocolate and buttermilk make this cake spectacular! The only thing that matters now is that you can eat it gluten free too.
This gluten free chocolate sheet cake will serve a crowd. The nuts are easy to leave off if you need to do so for allergies. It also freezes well if you decide to keep it all to yourself….no judgement passed!
I used my own gluten free flour blend (Gluten Free Flour Blend) but a basic gluten free flour blend will do! NOTE**if you use a brand other than what is listed in the recipe please check the brands recommendation on grams to cup to use. It varies significantly between brands!

Gluten Free Chocolate Sheet Cake
Ingredients
- 2 ½ cups gluten free flour blend
- 1 ½ teaspoon guar or xanthan gum
- 2 cups sugar
- 1 teaspoon baking soda
- 1 cup butter
- 1 ¼ cup water
- 4 Tbs cocoa powder
- ½ cup buttermilk
- 2 eggs beaten
- 1 teaspoon vanilla extract
Frosting
- ½ cup butter
- 4 Tbs cocoa powder
- 6 Tbs buttermilk
- 1 teaspoon vanilla
- 1 lb. powdered sugar
- ½ cup chopped walnuts or pecans
Instructions
- Preheat oven to 350 degrees F. Lightly coat a 9x13 baking dish with cooking spray and set aside.
- Mix gluten free flour, guar gum, sugar and baking soda in a bowl, set aside.
- In a saucepan over medium-high heat, bring butter, water, and cocoa to a boil. Pour over flour mixture, mixing thoroughly.
- Add eggs, buttermilk and vanilla and combine well. Pour mixture into prepared baking dish. Bake for 30 minutes, or until cake tester or toothpick comes out clean.
- While the cake is cooling, place butter, cocoa, and buttermilk in a saucepan over medium-high heat and bring to a boil. Remove from heat and stir in vanilla, powdered sugar and nuts until combine. Pour over cake and use a spatula to spread evenly over cake.
