Do you know how hard it is to find creamy dip appetizers that are free of mayonnaise? Let me tell you, it isn’t easy! This blue cheese spinach dip is a great mayonnaise-free dip that has a unique punch of blue cheese and crunch. I need a recipe like this because I have a mayonnaise hater in my house. The kind that gags at the sight or sound. As a result I’m constantly searching for or creating recipes to replace the tanginess that mayonnaise so delightfully brings to a creamy dip.
Here is a recipe for blue cheese spinach dip. It was formed from the desire of wanting a cold spinach dip that I didn’t have to heat up before a party, that was free of mayonnaise, and could use up the blue cheese I had in the fridge. I also wanted to try something outside of the standard spinach and artichoke dip. Now, the next time I make this yummy dip I will probably add crumbled bacon, because let’s be honest, bacon always makes things better and the thought of adding something slightly salty to this blue cheese spinach dip sounds amazing. Don’t get me wrong, the dip is good as is. I just like bacon. I served this with veggies, but gluten free crackers would work great too.
Blue Cheese Spinach Dip
Ingredients
- 10 oz. frozen spinach thawed and squeezed dry
- 1 cup sour cream
- 6 oz. blue cheese crumbles
- ½ cup sliced green onions
- ½ cup diced red bell pepper
- ¼ cup shredded Parmesan cheese
- ½ cup diced waterchestnuts
- ¼ teaspoon ground black pepper
- 1 Tbs lemon juice
- 2 garlic cloves minced
Instructions
- Combine all ingredients in a medium bowl. Refrigerate for at least 1 hour, or make one day ahead. Serve cold.
